The ‘Seasons Diamond’ afternoon tea features sweet delights named after favourite characters and period elements from the Bridgerton series including: ‘Queens Diamond’ a champagne Jelly, vanilla mascarpone mousse, strawberry compote, pink chiffon sponge, white chocolate case, ‘Whistledowns Tea’ a Yuzu mousse, citrus cream, and matcha sponge with a chocolate coin, ‘Danburys Dream’ a chocolate sablé biscuit, kirsch whipped ganache, black cherry jelly, chocolate crunch, and chocolate sponge, ‘The Beaux and the Bees’ Lemon curd set on a Linzer cookie and a ‘Regency royal scone’ with golden sultanas. Savoury delights and Sandwiches including pulled chicken with golden raisins and tarragon on choux pastry, a Pastrami Reuben with wild rocket, Ballymaloe relish, Pico de Gallo, and original gubbeen cheese, rounding off the savoury tier will be a market smoked salmon mousse garnished with black caviar, fresh dill and classic cucumber sandwich with mint and cream cheese. Inspired by the Seasons Diamond theme they have created 3 new signature cocktails that are a refreshing taste of summer: ‘Martini Masquerade’ which combines Maharani Gin, Elderflower Liqueur, Rhubarb, Mint & Rosemary Syrup, and Lime Juice, ‘The Scandal Sheet’ which is a combination of Belvedere Lemon & Basil Infused Vodka, Lemon Juice, Muddled Strawberries, and Cucumber, topped up with Elderflower Tonic and finally a non-alcoholic cocktail titled ‘Heirs and Graces’ which features Gordons 0.0 Gin, Butterfly Tea, Elderflower Cordial, and Lemon Juice.
